If you want to understand Italy, you must not sit down.

Those who are lured to one of the small, round tables on the piazza not only pay three times the price, they also manoeuvre themselves into the social margins. The real life, the heart of the country, beats at the bar. Where the chrome of the huge Faema machines gleams and the heavy porcelain cups clatter. This is where the Caffè is not simply drunk; it is negotiated, celebrated and consumed at a rapid pace.

Only time for the essentials

It is a short ritual prayer that usually lasts less than a minute. You approach the bar, a brief, almost imperceptible nod to the barista is enough. In Italy, espresso needs no adjectives, it is simply un caffè. While the machine hisses as it presses the dark, oily extract into the preheated cup, there is time for the essentials:

A quick sentence about the weather, a curse about politics or an expert analysis of the latest Serie A matchday. It's a fleeting intimacy between strangers, a social glue that holds society together.

Water before caffé

The etiquette is strict, even if it is not written anywhere. First you take a small sip of water, which the barista serves wordlessly. This is not to quench your thirst, but to cleanse your taste buds and set the stage for what follows. Then a look at the crema: it has to be thick, hazelnut brown, almost like a protective layer over the liquid gold. One or two quick puffs and the cup lands back on the counter. Done.

And just in case ...

And woe betide anyone who disregards the time of day. Anyone who orders a cappuccino after eleven o'clock in the morning is committing culinary sacrilege. For Italians, milk after breakfast is a heavy burden on the stomach, a tourist mistake that is met with raised eyebrows.

The true maestro sticks to espresso - pure, strong and to the point. It is the art of savouring the moment without dragging it out. A small victory over the hustle and bustle of everyday life, served in a cup that is barely bigger than a thimble but contains the energy of an entire morning.
